pomegranate + rosemary cocktail { holiday cheers }
This is part of the DisplacedHousewife Christmas Eve Dinner…or if you’re just looking for some holiday sparkle, this is it. I know I said I would have this up by Sunday…but…I’m never one to turn down a good time in the month of December. And that’s what’s been happening. A lot. But look at ’em, aren’t they pretty? Let’s have a couple together…by the fire, with some snacks and Christmas music and lights on the tree… Doesn’t that sound nice?

Every good dinner starts with a baller cocktail. If you take nothing else away from me, let it be this.

- Monday: Make Pomegranate Molasses + Salad Dressing & Ice Cream
- Tuesday: Make Pizza Dough + Pizza Sauce
- Wednesday: Make Tarts + Pudding Cakes (short of baking) + Mix Your Pomegranate and Rosemary Cocktail and Prep Your Pizza Toppings
- Thursday: Set Out Your Pizza Dough + Set Your Table, Assemble Salad + Bake Pizza, Bring Pudding Cakes to Room Temp + Bake
Pomegranate + Rosemary Cocktail
Makes 8 Generous Glasses
INGREDIENTS
- 20 ounces vodka
- 10 ounces Cointreau
- 10 ounces pomegranate juice, unsweetened
- 5 ounces simple syrup (Mix 3/4 cup of water with 3/4 cup of granulated sugar…microwave on high for 1 minute, stir until the sugar is dissolved and then set aside to cool. You’ll have a bit leftover…which you can use for more cocktails. Yay!)
- 5 ounces fresh tangerine juice (about 4 tangerines; could use oranges)
- Soda water to taste
- 1/2 cups pomegranate molasses (use my recipe here or buy some)…to rim the glasses (if you don’t want to futz with the molasses, you can always rub a tangerine wedge along the edge of the glass…and even use regular granulated sugar to coat it…don’t want to stress you out with extras if you’re not feeling it)
- 1/2 cup of sparkle sugar, to rim the glasses
- 8 sprigs of rosemary, for garnish
INSTRUCTIONS
- Put the vodka, Cointreau, pomegranate juice, simple syrup and tangerine juice in a large pitcher and stir. Taste. Add soda water until you get to the desired alcohol strength. I usually just put in maybe 1 cup of soda water for some sparkle…but I don’t want to dilute the flavor.
- Grab your glasses to prep.
- Pour the pomegranate molasses in a small bowl and about 1/2 cup of the sparkle sugar in another bowl. Dip the rim of the glass in the pomegranate molasses…hold the glass upside down and let any excess molasses drip off. Dip the molasses-rimmed glass in the sparkle sugar to coat the molasses. Drop a sprig of rosemary in each class. Pause for a sec…you’re having a Pinterest moment. #livingthedream
- Fill each glass 3/4 full with crushed ice and then add your cocktail. Boom. You’re done. I hope this makes your night as exciting as it makes mine! xoxo
