Chocolate Pomegranate Holiday Parfaits Recipe | DisplacedHousewife

Hey friends! We’re in full holiday mode right now…are you feeling it? I try to simplify everything this time of year because I’ve found I have a tendency to overdo and say yes to everything. Are you like that too? Nothing sucks the fun out of the holidays faster than being too busy to enjoy them.

I’ve partnered with FAGE to share the simplest non-recipe recipe that’s beautiful and perfect for feeding a crowd. I have been using FAGE forever, in both sweet and savory dishes. Sometimes I like to just heap some fresh salsa over the top and eat it like that – have you tried that? Does it sound weird? Sometimes I roast sweet potatoes and put a little bit of cheese on top, more salsa (are you getting the theme) and a big dollop of FAGE Total yogurt. I also love it in smoothies because it gives a nice protein boost and makes them nice and creamy…with just the perfect bit of tart. I love the 2% because I love a little fat in my meals.

These chocolate pomegranate parfaits are super easy to throw together, the perfect make ahead (+portable), protein-rich treat. They are even easy to customize to different tastes and textures.

Before We Get Started

  • YOGURT. Like I mentioned, I love FAGE Total 2% fat, but feel free to grab the fat-free or full-fat versionsβ€”you do you.
  • ARILS. That’s the fancy word for pomegranate seeds. You can buy them in the produce section already separated from the pomegranate, or it’s less expensive to buy the entire fruit, split it in two and then bang the exterior of the fruit with a wooden spoon to extract the seeds. You could also opt for citrus wedges (blood orange anyone?), berries…
  • CHOCOLATE. I went for dark chocolate because it’s not too sweet, it’s healthier and most importantly, I love the taste. A little goes a long way, so spring for the good stuff.
  • HONEY. I love honey, but you could also sub in some 100% pure maple syrup if you’re feeling it. It’s just a drizzle, so use what’s handy.
  • OTHER STUFF. You could also add in a layer of oats, coarsely chopped pecans…look in your cupboard and get frisky.
  • CUTE JARS. Look at your hardware store or online for cute, clear 6 oz glass jars that will really showcase those beautiful layers. Make sure you get jars with lids for airtight fridge storage.
  • MAKE AHEAD. Make these several days  ahead of time and stash in the fridge. Done. One less thing to think about.
  • RECIPE. The recipe is for 1 parfait, but you can double the recipe to infinite.

Let’s get our holiday parfait on, shall we?

Chocolate Pomegranate Holiday Parfaits

Makes 1 Breakfast Parfait

INGREDIENTS

  • 1 7-ounce container FAGE Total yogurt
  • 4 tablespoons fresh pomegranate seeds
  • 2 tablespoons dark chocolate, coarsely chopped
  • 1 tablespoon honey

INSTRUCTIONS

  1. If you’d like to get a little OCD, place the yogurt in a plastic bag and cut the corner or use a pastry bag to pipe half of the yogurt into the bottom of a jar. Use a small spoon to press the yogurt down if you see any air gaps along the sides.
  2. Sprinkle with half the pomegranate seeds, dark chocolate and honey. Top with the remaining yogurt and then the pomegranate seeds and dark chocolate. Top with the remaining bit of honey just prior to serving.
  3. Will store well in the fridge for 2-3 days. Happy holidaying!
