Giant Chocolate Chip Cookies

I know, I know. Just what the world needs…another ‘the world’s best’ chocolate chip cookie recipe. But in fact, that’s exactly what we need.

When was the last time you took a bite of a chocolate chip cookie and then went and had a crappy day? Or sunk your teeth into a still warm, ooey gooey cookie and it didn’t make you smile. The perfect cookie can make your whole body melt with contentment.  We need more of this in the world.

Before We Get Started:

  • I know, two different flours that aren’t all-purpose. I’m sorry. I really am. But I wouldn’t do this to you unless I truly felt it made a HUGE difference in how your cookie was going to turn out. I like a fluffy cookie, with some girth and these two flours deliver. If you look around at my other recipes, you’ll see that you can use them more. I always use bread flour in my cookie recipes and this oatmeal cookie also uses the white whole-wheat flour. I’m not trying to get healthy on you…you’ll really like what it does to a cookie.
  • Chill your dough. I like to chill this dough in the fridge before rolling…it makes it easier to handle. This dough, because of the oil, can be a little sludge-like and 20 minutes in the fridge really helps firm him up.
  • Freeze your dough balls…not long. Just about 10-15 minutes is all it takes. It will help them rise nicely once they hit the heat of the oven and it will also help them keep a nice round shape. I want my cookie to look as good as it tastes.
  • Splurge on some nice dark chocolate bars (or semi-sweet or milk, if that’s what you’re in to) and chop them up. You’ll be so so SOOO much happier with the finished cookie. The way it looks, the way it laces every bite with melted chocolate goodness…perfection. I pick up handfuls of different chocolate bars every time I go to the store so I always have a stash. You should too.
  • Why I use half butter and half oil… Well, I love the taste of butter. I think that’s pretty obvious. I use all olive oil in this cookie and it’s positively divine. But sometimes, I want a more classic chocolate chip cookie and this is that cookie. The oil adds this softness (and not flavor) that I love.
  • Let’s bake giant chocolate chip cookies, betches.

[ COOKIE NOTE ] I have never substituted all-purpose flour for all (or any) of the flour in this recipe…I will do this soon and see what happens…until then, proceed with all-purpose flour with caution…it hasn’t been tested! xo

Fricken Delicious Giant Chocolate Chip Cookies

Makes 2 Dozen Giant Chocolate Chip Cookies

INGREDIENTS

  • 1 stick (4 ounces) unsalted butter, room temperature
  • 3/4 cup sunflower or canola oil
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon real vanilla extract
  • 1 1/2 cups plus 1/3 cup bread flour
  • 1 cup white whole-wheat flour (I use King Arthur)
  • 1 teaspoon sea salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 1/2 cups dark chocolate, chopped
  • Sea salt flakes for dusting on top (prior to baking)

INSTRUCTIONS

  1. In a large bowl, mix together the butter, oil, brown sugar and granulated sugar until well-blended. Use either a spatula or an electric stand mixer fitted with the paddle attachment.
  2. Add in the eggs and mix on low until completely incorporated.
  3. Add the vanilla to the butter mixture and mix completely.
  4. In another medium-sized bowl, mix the bread flour, whole-wheat flour, sea salt, baking powder and baking soda.
  5. Pour the flour mixture into the butter mixture and mix until barely blended…there should be steaks of flour still.
  6. Pour in your 2 1/2 cups of chocolate chunks and stir until JUST BLENDED. Don’t overdo it.
  7. Cover the bowl of cookie dough with plastic wrap and put in the fridge for 20 minutes.
  8. Meanwhile…put some parchment paper or a silpat on your cookie sheets.
  9. Turn your oven to 375 degrees F.
  10. Once the dough has gotten its’ chill on…roll into large (about 2 generous tablespoons each or about 1.75 ounces each…yes, I weighed them). I always try to not overwork my dough, but I do nudge it into a nice sphere-like shape so that my cookies will come out nice and round.
  11. Place the cookies on the baking sheet with about 2 inches between each ball of dough.
  12. Sprinkle the sea salt flakes all over the dough balls like a boss. That’s right, you got it. Yum. I love this part. Take a photo. It looks pretty.
  13. Put the cookie sheet with the dough balls in the freezer for about 10-15 minutes to firm up a bit.
  14. Pop the cookies straight from the freezer into the oven for 11 minutes.
  15. Once out of the oven let the cookies cool on the sheet for a least 5 minutes and then transfer to a cooling rack.
  16. Now grab your milk (or scotch) and your cookies and go watch some telly.

    Can I freeze the dough in balls on a sheet and then cook them a few days later? If so, should I let them rest outside of the freezer for a few minutes before baking them?

      Hi Maritza! Store them air-tight in the freezer and then they can go directly from the freezer to your oven, just tack on several extra minutes of bake time. Usually between 2-3 minutes does the trick. Happy baking!! xoxo

    I am pretty new to your website, and agree with one of your other (former) readers. I got excited with you over your recipes, but when you decided to demean Mr. Trump, that’s when I lost all interest in what you had to say. If you feel embarrassed, so be it. I would have felt worse, knowing that we had elected a known law-breaker into the highest position of our Country. If you didn’t know this fact, perhaps you should read up on her, instead of relying on people like Bill Maher and other late-night hosts. They are just comedians who do an act, with farce interspersed, to amuse their audiences, and sway their vote!! To defend the Kardashians, shows me that you’re either not old enough, or not smart enough, when it comes to Politics. Stay there in the phony world of the Holly-weirdos!!

    Just made these tonight and they were very well received. I was skeptical with using oil but they had a nice crisp to chew ratio–something I have a hard time achieving with butter only. Loved the suggestion to freeze prior to baking, my cookies have never looked so good. Thanks for the new ccc recipe!

    I’m sorry to tell you that I’m not going to follow your blog anymore. It’s not because of your comments regarding Donald Trump but rather your comments about how you’d rather dumb yourself down by watching ET, the Kardashians, etc. The fact that you would rather watch that trash than keep yourself current on what’s happening in the United States is distasteful to me and I don’t want to read anything more you have to offer.

    I, too, feel the need to leave the country should Trump be elected. Having him be the face of a major political party in America right now is an insult to that party and all educated, level-headed Americans everywhere. I’m absolutely disgusted that he has a following. Talk about how anti-intellectualism is killing America, and Trump’s face becomes the poster child of so much that is wrong in America…. BUT, for now, I agree…. a stiff drink & a mind-numbing session of Kardashian TV with a plate of your sinful cookies by my side, and life is good. ❤️❤️❤️ Thank you!!!

      I’m mortified that it is even a consideration!!! This is so not a political arena (I get that…I’m a little more cookies, butter and martinis), but god forbid he wins, what country are we fleeing to?
