Boozy Blueberry + Tangerine French Toast

There is a lot of flavoring happening here. Almost too sinful for breakfast. But that just makes it ohhh so much better. All the flavors from the { tangerine + blueberry breakfast bread } are echoed and reiterated in this French toast. It wasn’t until I made the aforementioned breakfast bread and started in on making this French toast that I was reminded of a breakfast in which I had the very most fantastic blueberry French toast. I went with one of those friends that is teeny tiny but eats like a linebacker. We had the blueberry French toast with blueberries embedded in the bread and smothered on top. It was AAAAmazing. As I was making my very own version of blueberry French toast this morning I realized I was reaching way back into my subconscious and drawing on that breakfast. I can’t remember what I did last Tuesday…but I remember every…single…bite…of that breakfast.

I hope you can lodge this in your memory bank and remember that this is what you want to serve to those you love on Valentine’s Day…or any day you want to make them feel special. A couple of quick notes…

  • Yes, I highly urge you to make the { tangerine + blueberry breakfast bread } …it’s so worth it. It makes two loaves: one to eat as soon as it comes out of the oven and the latter to make this French toast. You could sub in another bread…but the beauty of this whole meal is the layers of blueberries. It’s a blueberry explosion. Heaven.
  • This recipe is morphed and twisted from the Barefoot Contessa’s Challah French Toast recipe. If you’re familiar with that one you’ll recognize some of its’ roots in here.
  • Making the bread is the most time-consuming part of this…making this French toast is a breeze. Super quick.
  • Since you have the Cointreau out, you should whip up a cocktail while you’re making this? This French toast is an easy recipe…no thinking required. So just tune out and tune in.
  • I’m trying to watch the Grammy red carpet…so I’m going to get straight to the recipe.
  • Seriously. Make all of this happen next weekend.
boozy blueberry + tangerine french toast

Makes 9-10 Thick Slices

INGREDIENTS

  • 1 loaf of blueberry breakfast bread  or other equally exciting hunk of hefty bread
  • 6 large eggs
  • 1 Β½ cups milk (I used 2 %)
  • 1 teaspoon real vanilla extract
  • 1 teaspoon five-spice powder
  • 2 tablespoons real maple syrup
  • 1/2 teaspoon sea salt
  • 1 tablespoon tangerine zest
  • 1 tablespoon Cointreau
  • 1/4 cup granulated sugar for sprinkling on the tops of the toast just before cooking
  • Butter and veggie oil (I used safflower oil) for cooking. I used about two tablespoons of each.

For Serving

  • Powdered sugar
  • Heaps of blueberries
  • Tangerines, peeled and pulled into little slices
  • More maple syrup

INSTRUCTIONS

  1. Cut your bread into 9-10 pieces, about one-inch thick-ish.
  2. Mix eggs through the Cointreau in a large casserole dish.
  3. I wasn’t able to fit all of the bread in my casserole dish so I did it in batches. Soak for 5 minutes, then flip over and soak for another 5 minutes. Set on a platter while you finish soaking the remaining bread pieces. Make sure you let the extra egg drip off of the bread slices and back into the casserole dish.
  4. Heavily sprinkle the top of each piece of bread with 1 teaspoon-ish of granulated sugar.
  5. Meanwhile melt one tablespoon each of butter and veggie oil over medium heat in a large skillet…let the pan get nice and hot before you put the bread slices in. You will need to work in batches, fyi, unless you have the world’s largest skillet.
  6. Put the bread, sugared-side down, in the pan and cook for 3 minutes (should get a nice, toasty, caramelized brown thing happening).
  7. Sprinkle the tops with more sugar before flipping over to brown the bottoms. Cook for 3 more minutes (for a total of 6 minutes).
  8. Keep on eye on your butter, you don’t want it to start burning. So adjust your heat as you go. Also, add additional butter and oil for each batch that you put in the pan, making sure the butter-oil combo has heated up a bit before putting the next batch of toast in there.
  9. Dust with the powdered sugar, throw blueberries and tangerine slices about and then flood in copious amounts of maple syrup.
  10. You can go back to bed now.
