Giant Salted Dark Chocolate + Olive Oil Cookies

I haven’t gone on and on about my laziness lately because I think I’m giving myself a bit of a bad rap. Indulge me in a wee bit of clarification. The truth is, I’m actually sweating balls, toiling away, sun-up to sundown. I’m working on my writing (love), coming up with new recipes (love squared), bidding on projects (mamas gotta bring home the bacon), chauffeuring and feeding and loving two kids and generally keeping the dream alive. BUT, aside from all of that busy-ness, I just love to be in my soft clothes, chilling, puttering around in my kitchen or snuggled in bed. I can go from 100 mph to .10 in mere seconds. Seamlessly. I’ve elevated it to an art form.

Today I was craving cookies like mad (and lusting for a soft-clothes day) and (gasp) I didn’t have any butter in the house. This fact alone is totallyΒ shocking as I buy 60+ pounds of butter at a time. Frequently. It’s actually grossing me out a bit. So while I was working away on my computer (keeping that dream alive) I couldn’t stop thinking about what would happen if I shoved olive oil in place of butter in some salted chocolate chunk cookies. I tried to focus on a proposal. Cookies. I tried ridding my overflowing office of old bills and stacks of paper to no avail. Cookies. I hopped back on the computer to write. COOKIES. Seriously, they were screaming at me. Begging for attention. All I could think about was that Giant. Chocolate. Chunk. Cookie. With lots of salt. I wanted this cookie to be so big, with enough girth, that it could be a meal. And since I was working from home, why wasn’t I in said soft clothes making these damn cookies? All logical protests escaped me.

I’ve done the oil-in-place-of-butter cookie routine before…many moons ago. But I had zero record, reference or recollection of proportions and amounts. If you know me, this is not a shocker (I have a friend that calls me Dori from Finding Nemo). Not to be deterred byΒ my butter famine, I futzed with flours and oils and such until I came up with this magical cookie. Let me just say that you are about to have the softest, chewiest chocolate chunk cookie experience ever. No flat, fallen or overly crispy cookies here. No thank you. Not interested. Just keep on moving. Meanwhile my inbox has filled up and calls have gone unanswered and responsibilities forgotten. Chocolate can do that. But I don’t care. I’ll be up until midnight making up for lost daylight. Totally worth it. I hope you have a lazy/busyΒ day (with soft clothes) in your very near future. I feel ten years younger. Practically a preteen.

Before We Get Started:

  • Flours. I have searched high and low for the perfect cookie dough. I don’t like edges that get too thin. I also don’t like a flat cookie. I want my cookie soft and chewy with some substance. I’ve found that I get that just-perfect combo using a white whole-wheat and bread flour combo. I also only use King Arthur Flour when baking. I’ve tried other flours but nothing gives me the consistent results. I use both flours in lots of my recipes…so if I can get you to buy these (as well as cake flour), I’ll feel as though my work is done. I can call it a day.
  • Chocolate. I used this MARVY Trader Joe’s dark chocolate caramel bar that is 70% cocoa. They have them stacked at the check-out. However, feel free to use whatever chocolate floats your boat. I like it dark. ReallyΒ dark. Personal taste my friends. Whatever you do, make sure that you chop up your chocolate. Whether you’re using a bar or chips, I recommend the chop. It keeps the cookie interesting with the varying chunk size. Also be sure to include all of the chocolate fluff that’s leftover on your cutting board. I love the way they litter a cookie with slivers of chocolate.
  • Oil. I used olive oil in the recipe. You can taste a wee bit at the end of the bite. I like it. My kids liked it. My nephew loved it. However, if you don’t want any of that flavor in your cookie, I would recommend using a safflower or sunflower seed oil. Both are neutral, mild oils.

Giant Salted Dark Chocolate + Olive Oil CookiesΒ 

INGREDIENTS

Makes about 12 giant olive oil cookies (or 3 dozen smaller)

  • 1 cup of olive oil (or you can replace with a more neutral oil such as sunflower seed or safflower oil)
  • ΒΎ cup light brown sugar
  • ΒΎ cup granulated sugar
  • 2 teaspoons real vanilla extract
  • 2 large eggs
  • 1 Β½ cup bread flour
  • 1 cup white whole-wheat flour (must be the white whole-wheat or the cookie will turn out denser)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 Β½ cup chopped dark chocolate (or whatever chocolate strikes your fancy)
  • Coarse sea salt for dusting

INSTRUCTIONS

  1. Preheat your oven to 375 degrees F.
  2. Cover your baking sheets with either a Silpat or parchment paper.
  3. In a large bowl, mix together the oil, brown and granulated sugar, vanilla extract and eggs until fully incorporated.
  4. In a medium-sized bowl, siftΒ together the bread flour, white whole-wheat flour, baking powder, baking soda and sea salt.
  5. Pour the flour mixture into the oil-sugar mixture and using a spatula mix until just blended.
  6. Pour in the chopped chocolate and fold into the dough.
  7. Get about ΒΌ cup of dough and it should easily mold into a ball-ish heap. Leave a healthy 2-3 inches between your giant olive oil cookies.
  8. Sprinkle about 5ish coarse grains of salt per cookie.
  9. Bake for 11 minutes.
  10. Let cool for 10 minutes on the baking sheet and then finish cooling on a cooling rack.
  11. These are easy cookies, aren’t they? Sometimes it’s nice to take a break from creaming all of that butter. Just saying.

  • You might wonder if I’m still on Dub Dubs, what with the cookie/sweets and all. Yes, I am. This cookie is 5 points, by the way. Yup. That’s a good chunk of dinner. Coupled with a glass of wine and my points are gone for the day. I’m cool with that.
  • On the backend of my site IΒ can see what people are searching to find me. My favorites, so far,Β are ‘blueberry massage beijing’ and ‘bitch desire from housewife’. I think anyone searching either of those terms is going to be sadly disappointed when they land on these pages of cookies, scones and treats. Not a boob in sight. Sigh.
  • And in other totally random news, I just got an email from the producers of Sex Sent Me to the ER. They are casting for the upcoming season and thought DisplacedHousewife readers might be interested. Perhaps you all have a sex mishap you’d like to share with America? I’m just curious, what kind of vibes am I giving off?
  • I’m excited for summer. Loving my chickens. Planting my (late) spring garden. Excited it might rain this week. Excited about all the fun ideas I have for thisΒ year. Finishing redoing my office…yes, that’s going on nine months now. Another gasp. I know. I should be embarrassed, but I’m not. Thinking lots about how many assumptions we make about why people do the things they do…and how often we’re wrong. Trying to work on managing stress. Tips? Love meditating. But don’t do it half as much as I should. I love the guided meditations from UCLA’s Mindful Awareness Research Center. Do them!! Even if you’ve never meditated before, you will love this. I do it with my kids. My son loves it. Should do it every day, but don’t. That’s pretty much anything positive in my life. Double sigh.
  • Thinking about exercising. Just thinking about it… Not sure we’ll make it past that this week.
  • Paper shredders…do you have one? Get one. Now. It’s like popping a zit. Ridding yourself of this huge imaginary financial burden. Once all those bills (from year’s past) areΒ shredded, it’s as if all ofΒ yourΒ previous financial sins have disappeared into thin air. Gone. Just like that. Don’t worry about the meditating and exercising. Just make cookies and shred bills. You’ll be 1000x more saneΒ come the weekend.

    Hello Rebecca! Cookies are brand new for me! Perfect texture and flavour too compex to describe! I reduced the amount of sugars as it’s a bit too much for me: I’m afraid it affected texture but worked great still! And unfortunately we don’t have such a type of flour as “bread” one here in Russia – I do hope some day I have an opportunity to compare. But olive oil – ahh! they way it acts in a baked goods… Thanks a lot for all the new culinary horizons! Good luck in future experiments! :)

    These were great! I’ve recently discovered I have a sensitivity to casein so have been avoiding butter but desperately have missed a chewy-crunchy cookie. Then I saw your olive oil-butter hybrid recipe on #thefeedfeed which lead me here! A baking friend gifted me a bunch of “Gold ‘N White” flour which, from the best of my research, is almost a cross between bread flour and all-purpose, so your flour ratio seemed a good candidate for using that flour. It worked beautifully and these cookies were everything I’ve been missing. Thank you!

    I just made these and they are fantastic!!! I have been looking for a good olive oil chocolate chip cookie recipe but my results have been less than stellar. Softening butter is the bane of my existence – ha! Thank you for such a wonderful recipe!! Will definitely be making these again and again!

    Holy heck, talk about giant! Give to me! I once tried to make an olive oil cake and it was a complete failure, so whenever I see olive oil baked goods I get super jealous. These look intensely delicious. Oh, also: bitch desire from housewife. Yes.
